Is there one food you can't enough of? For my husband it is bacon. He will have bacon with an egg sandwich in the morning, then come lunch time loves whipping up a quick BLT sandwich, and for dinner he is always looking for ways to incorporate bacon into whatever I making. From bacon on his burgers, to bacon crumbled up in pasta and salads, to bacon on his pizza, wherever he thinks bacon will pair with something, he will add it. So, when I stumbled across the TBJ Gourmet Bacon Jam website recently looking for just the perfect gift for him for Christmas, I knew I hit "bacon"...I mean gold. :-)

I was recently sent the TBJ Gourmet's Emergency Bacon Kit to review, and knew just the person to help me sample each of the three jams. You would think it was Christmas morning when my husband saw the kit. He had no idea what was inside of it, but knew it had to be good when he saw the cool pig in shades on the front, along with slabs of mouthwatering bacon. Once I opened the kit and showed him the three jam jars inside, he was excited to try them out. The classic uncured bacon jam stood out to him, and he said he wanted to try this sweet and savory spread with a grilled cheese sandwich for dinner.
That night he took charge in the kitchen and whipped up grilled cheese sandwiches for everyone. I have to say, I was reluctant at first to take a bite as I am not a big jam or spreads type person, but it smelled really good, and my girls and husband were already going back for second and third bites. With my first bite, I could taste the tender pork belly and caramelized onions, with the hint of sugar. It really added to the flavor of the cheddar grilled cheese and left my mouth watering and wanting to take another bite. I told my husband this would be good on burgers, too, so we'll be trying this tomorrow night for dinner.
Even though my girls are not big bacon eaters like my husband, they were curious to see how the smoked bacon salt, so today in place of kosher salt on their homemade potato chips, they sprinkled a little of this bacon infused salt on them. They really liked the smoky taste this salt gave to the homemade chips, and said when dipped in ketchup, they tasted even better. Mmm, I am getting hungry just thinking of these chips earlier. Not only did they smell good in the plate, but as you brought it to your mouth, you could smell the bacon salt combination.
The Smoked Bacon Maple Sugar is recommended to be used with pork loin to elevate the flavors. Unfortunately I didn't have any on hand and couldn't find it at the market. So, we switched things up and used it on pork chops. WOW! What a great taste...it really made our taste buds dance. The combination of the maple sugar and smoky bacon along with the pork made for a tasty dinner. Even my oldest daughter who is a picky eater wanted to try it, and after the first bite, she was asking for a pork chop of her own to eat.
