Homeschooling my girls is a full-time job in and off itself.  Not only do they do schooling at home, but they have over a dozen outside classes and programs they attend throughout the year.  On average, we are traveling outside the house 3-4 days a week, with an hour plus drive each way to classes.  With all the traveling we do for their outside classes, I am surprised we are able to fit in extracurricular activities...but, we do!  The girls also do weekly swim lessons, cooking classes, Girl Scouts, art classes, and a few other classes that rotate weekly and/or monthly.  So, by the time we get home after a busy day of driving all about, the last thing I want to worry about it spending over an hour in the kitchen cooking up a meal.  But, I also don't want to rush right out and grab unhealthy fast food either.  
Like so many other moms I have bought cookbook after cookbook featuring fast family-friendly recipes to cook up. I usually have all the dry ingredients on hand in the pantry and spice rack, so all I needed to get from the market was broccoli and a couple demi-baguettes. I used the PERDUE ® Harvestland ® Boneless Skinless Chicken Breast Tenderloins, Individually Wrapped, which came with my bundle box. Upon receiving my bundle box, I had put most of the food in the freezer to use at a later date, as I received the box a few days prior to Christmas, and my refrigerator was filled with side dishes and supplies for desserts I needed to cook up and bring to my family's house for Christmas dinner.
What I love about the PERDUE ® Harvestland ® Boneless Skinless Chicken Breast Tenderloins is that they are individually wrapped, so you can take one or a few packages, depending on your recipe or need, and thaw them in the fridge or on the counter on a plate. These quick thawing tenderloins are really plump and full of flavor. For a family of four, I ended up taking out 3 individually wrapped packages to cook up, knowing I would have some for leftovers, so my husband could take to work the next day, and I could re-heat at lunch for my girls and not worry about what I could make for them being heading out to a class or settling in to do school work at home.
Seeing how much my family loves the oven-roasted Parmesan chicken recipe I cook up often, I thought I would share it with you, and maybe inspire you to add a spin to the recipe, or pair the chicken with your family's favorite side dishes.  And, when you buy the family bundle or any of the other bundles from Perdue Farms and have it shipped directly to your door, you will be one step closer to a stress-free dinner experience, and will have them family asking you to make the oven-roasted Parmesan chicken recipe again soon.
Oven-Baked Parmesan Chicken with Roasted Broccoli and Garlic Bread

Ingredients Needed (for 4 servings):
1/2 Cup of Panko Breadcrumbs
2 tsp. paprika (plain or smoked)
16 oz. broccoli florets (cauliflower and even carrots stick fries make for great alternatives to broccoli for a side)
4 TBSP. Garlic Herb Butter - I like the Epicurean butter pouches you can find in the market or bought through Amazon.  If you can't find you just need to use 4 TBSP softened butter and mince 2 whole garlic cloves, before sprinkling a pinch of Kosher salt and then using the side of a knife, smash it up into a paste. Then, add the smashed garlic paste in with the butter, along with a pinch of salt and pepper, and 1/4 tsp. of Italian seasoning
1/2 Cup Parmesan cheese - I buy the block of cheese and use a cheese grater to crate.  But, you can also use buy the container of it already grated in the cheese section at the market or near the deli area

2 Demi-Baguettes
Kosher Salt and Ground Pepper for Seasoning
EVOO (Extra Virgin Olive Oil)
Cooking Spray w/ Olive Oil
3-4 Oven-Ready Aluminum Trays - For easy clean up, I like to stock up at the Dollar Store on oven-ready aluminum trays to cook in. They are easy to use -- just spray with cooking spray and add the chicken to one tray, the broccoli to another and even use one for the garlic bread. When dinner is over, just throw the aluminum trays away. No need to worry about a messy clean up or scrubbing to get the Panko cheese coating off a baking sheet if it happens to stick and melt to it.
Directions:
1.  Adjust the racks in the oven so they are in the middle position. Then, pre-heat oven to 425 degrees.
2. In a small bowl, combine the Panko, paprika, a pinch each of salt and pepper, along with a large drizzle of olive oil. Stir to combine, and then set aside.
3.  Remove chicken tenders from packaging and place on a plate.  Pat dry with a paper towel -  this helps the bread crumb mixture stick better.  Season the chicken tenders all over with a pinch of salt and pepper.  Place the tenders inside a aluminum tray you have prepared by spraying the bottom with olive oil cooking spray to prevent sticking.  You can then brush the tops of the chicken tenders with olive oil, and then add the Panko mixture to the tops of the tenderloins, making sure to push mixture coat so it sticks to the chicken.   If you are in a rush, you can toss the chicken tenders in a plastic Ziploc bag  with a large drizzle of olive oil, before adding the Panko mixture to the bag and shaking all about, making sure you press the Panko coating so it sticks to the chicken. Remove from the bag and add to the prepared tray. 
There were so many tenderloins, I needed a second tray...
Because my girls love finger foods, I find coating all sides of the chicken with the Panko mixture is more appealing to them, than just having the tops coated.  If you choose to make this recipe with a whole chicken breast, you can just add the Panko mixture to the top of the breast and press to adhere.
4.  Cut broccoli florets into bite sized pieces, if needed, and then add to another aluminum tray.  Drizzle over olive oil, then add a pinch of salt and pepper, before tossing the broccoli to coat.
5. Place the broccoli and chicken tender trays on the middle rack in the oven and roast for about 15-20 minutes.  The broccoli usually only need about 15-17 minutes to cook, so watch this and take out of the oven when it starts to brown lightly at the edges.  The chicken will need a little longer to cook, about 20 minutes.  You want the chicken to be crispy and cooked through.
6. While the chicken and broccoli cook, halve the baguettes lengthwise.  Spread the garlic herb butter on the cut sides, and then place on a baking sheet lined with aluminum foil for easy clean up, or to another disposable aluminum tray.  When you remove the broccoli from the oven, add the bread to the oven to toast for 5 minutes.
7.  Serve up the chicken tenders with your favorite dipping sauces, and enjoy the broccoli and garlic bread on the side.  
Throw away the aluminum trays, and cut your dinner cleanup in half. :-)
