Is your family one of the 25% that serves up breakfast for dinner each week?  I love breaking from routine every other week, and will switch up a spaghetti night with pancakes.  My family loves this change, as we make our Breakfast Night fun with a toppings bar or create new pancake flavors with add ins.  And, now, that the girls are getting older, they are getting more involved when it comes to cooking and prepping meals.  Breakfast Night is one of their favorite s to help me shop for and prepare.  They, too, love to switch up toppings and come up with fun new spins on the plain old blueberry pancake.  

Recently, we were sent a fun Breakfast Night Starter Kit from Krusteaz which included Buttermilk Pancakes, Blueberry Belgian Waffles, Chocolate Chunk Muffins and Honey Wheat Pancakes mixes, as well an oversized pancake spatula, one squeeze bottle for pancake art, and a Krusteaz-branded oven mitt, all to make our next Breakfast Night fun.  Also included with our starter kit was Breakfast Night recipes to offer up inspiration, which my girls loved, as it gave them new ideas to try in the kitchen. :-)

With the recent snow we have been dealing with and shoveling out from, the Breakfast Night starter kit from Krusteaz couldn't have come at a better time, as we have been making less trips to the market because of the bad weather.  I have been turning to my pantry to put together my weekly meal plans, and I have to admit, the menu was getting a little boring.  I don't know about you, but, I love pancakes for breakfast or even dinner.  There is something about pancakes that is comforting, and warms you up, especially on cold winter nights.  And, my girls feel the same way, and continually ask for pancakes at dinner time. 

Having leftovers that could be enjoyed as breakfast or even a snack on the go was extremely helpful the next as the girls woke up a little late, and we found ourselves rushing around to get out the door.  But, because the breakfast was already cooked up and just had to be reheated, they were able to enjoy the most important meal of the day -- breakfast. :-)

Last Wednesday we planned our Breakfast Night using the pancake mixes we received from Krusteaz. Usually it is hard to get my girls to try new foods as they are picky eaters.  But, there is something about pancakes and the different toppings that they can add to them, that gets them excited about pancake night and trying out their creations.  Bella ended up going crazy adding whipped topping followed by frozen blueberries and raspberries to her pancake stack, while Savannah opted for whipped topping and colored sprinkles, with a smiley face made out of blueberries and strawberries.  Also, instead of making just the basic blueberry pancakes from the Krusteaz mix we were sent, they added shredded chocolate...because, as you know...everything tastes better with chocolate -- and, it did!

Another great thing about Breakfast Night in our house is that we can freeze any leftover pancakes for breakfast another day.  The girls have even asked for pancakes for a snack at times, and love being able to take a bag of them out of the freezer and microwaving for about 15-20 seconds to warm up.
