Are You Up For the "Eat Seafood Twice a Week" Challenge? (Review and Giveaway, 3 Winners)



Did you know that October was National Seafood Month?  I found out near the end of the month when the folks at Gorton's emailed me about their "Eat Seafood Twice a Week" campaign.  During the month of October, Gorton's was sharing tips and the benefits of eating fish twice a week, along with awarding followers with free seafood! 

Even though National Seafood Month is over, doesn't mean you shouldn't know more about the "Eat Seafood Twice a Week" initiative, and have a chance to win a fun prize pack (more details below).

After learning about all the health benefits of eating fish on a weekly basis, I am working to include more fish in our diet and weekly meal plan.  Just the other night, I picked up a package of Gorton's Grilled Salmon, and prepared it per the instructions on the back of the box.  But, then when it was done, I flaked the fish up and filled soft tacos with it.  


I served these soft tacos with a side of tartar sauce, for those who wanted to dip their tacos in or spread over the fish.  Everyone loved the fish tacos and couldn't believe the fish was from Gorton's and was cooked from a frozen state, as it tasted so fresh and delicious.  

In addition to this new fast and easy meal I can serve my family, I also found some other quick and easy recipes from Gorton's Galley, their recipe section, and can't wait to head to the market this week to grab more Gorton's fish products.  Here is one recipe I plan to serve the family this week:




Salmon Frittata


This makes a great dinner OR breakfast and can be altered to fit anyone’s individual preferences. Add your favorite fillings to the Salmon and egg base. Gorton’s Recipe Renovation Contest 2nd place winner, submitted by Joni H. of Rocklin, CA.

Ingredients:

1 Gorton's Classic Grilled Salmon Fillets
2 green onions, chopped
3 Tbsp olive oil or butter
6 eggs, beaten
salt & pepper to taste
1/2 tsp dried tarragon
2 Tbsp chopped fresh parsley
1/3 cup freshly shredded Parmesan cheese

Directions:

1.  Remove fillets from box and microwave for 1 minute to soften slightly. Cut into bite-sized pieces.
2.  In a large, oven-proof skillet over medium high heat, saute salmon pieces and onions in olive oil until salmon is opaque.
3.  Pour in eggs, seasonings, and herbs. Cook until edges are dry, slipping spatula under frittata occasionally to allow uncook egg mixture to flow beneath.
4.  While set but still glossy, sprinkle with Parmesan and slip under broiler to brown top slightly. This makes a great dinner OR breakfast.
