Colman’s Easy Lemon and Mustard Chicken


Ingredients


6 chicken breasts, boneless and skinless


4 T. salted butter


3 T. fresh lemon juice


3 T. Colman’s Original Prepared Mustard


1 tsp. tarragon


Preheat oven to 375 degrees.


Place chicken breasts in baking dish. Melt butter and mix with lemon juice, mustard, and tarragon. Pour over chicken and bake for 45 minutes.


Serve with your favorite vegetable, rice or pasta dish.


Serves 6.


Tip: If the lemon juice, mustard, and tarragon flavor is too spicy for young children, add some honey to tone down the heat but keep all of the flavor.

My Thoughts:

I was sent a sample of Colman’s Dry Mustard Powder, along with their prepared mustard to try with my family.  Before receiving these samples, I had seen Colman's products on the store shelves in the market, but never purchased them.  I am used to the same old mustard my immediate family has been enjoying for years.  Why change something if it isn't broken?  :-)

But, these samples couldn't have come at a better time, as we were having a family cookout and I ran out of mustard last weekend.  I remembered I was sent sent a sample of Colman’s prepared mustard, and put it out on the table. After a few gasps, as people were looking for the tried and trusted prepared mustard they have come to expect at the table, I told them to give this prepared mustard a try.

So, as they slathered this mustard on their hot dogs and burgers, and then took a bite, smiles were seen on everyone's face, all around the table.  "Wow!, "Why haven't we tried this earlier," and "Pass the jar" were the comments I heard.  Comments like these continued throughout dinner, and by the end of the meal, the jar of Colman's prepared mustard was empty.  Everyone agreed that going forward I have Colman's prepared mustard on hand for all gatherings.  The spicy kick of the mustard was what got everyone hooked.  And, unlike other mustards, a little goes a long way.  I am so glad I was able to sample this mustard, and share with my family -- who are all fans now, too.

As for the dry mustard powder, I wasn't sure what to make with it, until I was sent the above press release and saw the recipe for the Colman’s Easy Lemon and Mustard Chicken (see above).  Not knowing what to make the other night for dinner, I whipped this meal together and served with a side of rice and broccoli.  Mmm, it was so good.  Usually it is hard to give flavor to chicken breast, but just by adding Colman's dry mustard powder, it really transformed a boring chicken dish into something amazing.  And, as a busy mom, I loved how it was quick and easy to prepare, and didn't take many ingredients -- all of which I had on hand.

My family devoured this meal, and asked me to make again SOON.  I love when I stumble across easy to prepare recipes, and have my family love.  It makes putting together the weekly meal plan so much easier. : -)
