My Review:  

Being a new mom, I find it hard to plan out a week's worth of meals for my family.  Due to this, I resorted to using meal assembly companies to prepare my meals, but found over time the meals became too expensive or lacked flavor.  So, I had to begin shopping at the market and preparing meals on the fly.  There were days when Savannah was fussy and teething and the last thing I wanted to do was decide what to make for dinner and spend 1-2 hrs. in the kitchen.  As a result, we found ourselves eating out more than eating in.  And, the food that I bought at the market would go bad.

But, not any more.  Thanks to Dinner is ReadyI can now spend a Saturday afternoon preparing meals for the entire month and freeze them.  It is great.  While my husband is spending time with Savannah, I can run to the market and buy supplies, and then come home and put together healthy and delicious meals that I can freeze and have ready for the upcoming weeks.

Each Sunday night, I simply take out 2-3 frozen meals and let them thaw.  Then, I am ready to prepare a meal in minutes each week night.  You don't know how much time and money I have saved with Dinner is Ready cookbook.  The recipes are easy to follow, and every recipe is something my family would enjoy.

My family just loves the following recipes:

Honey Lime Chicken
(Dinner Is Ready page 143)
2 lbs chicken tenders
1/2 Tbl garlic salt
1 Tbl peanut oil
1 20 oz can pineapple rings
1/4 cup honey
3 Tbl lime juice
2 Tbl soy sauce
1 Tbl cornstarch
Sprinkle chicken with garlic salt. Brown in oil. Drain pineapple. Add one fourth of the pineapple juice to skillet. Cover and simmer 6 to 8 minutes until chicken is golden. Remove chicken. Add honey, lime juice, soy sauce, cornstarch and remainder of pineapple juice. Bring to boil. Cook and stir until thick and clear, about 1 minute. Remove from heat. Allow to cool. Place chicken, pineapple rings and sauce in freezer bag. Label and freeze.
To serve: Thaw. Heat until sauce is hot and bubbly and chicken is heated through.


Simply Lasagna
(Dinner Is Ready page 164)
12 lasagna noodles
2 cups cottage cheese
1 egg, slightly beaten
1 T dried chopped parsley
2 T Parmesan cheese
1 cup Mozzarella cheese, shredded
1 1/2 cups Monterey Jack cheese, shredded
3 - 4 cups Spaghetti sauce
Do not cook the lasagna noodles. Combine the cottage cheese, slightly beaten egg, parsley and Parmesan cheese. Grease foil baking pan(s). Cover bottom with thin layer of sauce. Layer noodles (do not cook them, break them to fit), sauce, half the Mozzarella and half the Jack cheeses. Top with another layer of noodles, then the cottage cheese mixture. Top with another layer of noodles, then the rest of the Mozzarella and Jack cheeses and cover with a thick layer of spaghetti sauce. Cover with extra heavy foil. Label and freeze. Makes 1 9x13 or 2 8x8 pans.
To serve: Thaw. Bake covered for 45 to 60 minutes at 375°. Uncover, top with more Mozzarella cheese and bake an additional 5 minutes or until cheese is melted.
