Let Santa Cruz Organic: Help Make Thanksgiving Dessert or Snack-Time Easy and Tasty for Your Family - Applesauce Cake Recipe + #Giveaway

Fall is finally here and that means Thanksgiving is right around the corner.  Will you be hosting Thanksgiving dinner at your house this year, and if so do you know what you will be cooking for sides and desserts.  Thanksgiving is the one holiday a year that I have family over.  Even though I have the Turkey and sides catered -- it is my birthday gift to myself each year -- from a local Inn here in CT, I still have to make appetizers and desserts.  So, right now, I am searching the Internet and Pinterest for ideas of things to make and serve my guests.

In addition to wanting to try new recipes each Thanksgiving, I also have to think about my two girls, who are picky eaters.  They have a limited list of foods they will eat, so I have to be creative in way to use their likeable foods to make tasty desserts they will eat.  Like most kids (and adults) my girls love apple sauce, so I was thinking to make an Applesauce Sauce with Glaze as one of the desserts.  I stumbled across this recipe over at myrecipes.com and it looks easy to make and is healthy, too.  



Ingredients

  • Cake:
  • 8 tablespoons (1 stick) unsalted butter, at room temperature
  • 1 cup sugar
  • 1 large egg, at room temperature
  • 1/2 teaspoon baking soda
  • 1 cup thick applesauce
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/2 cup raisins
  • Glaze:
  • 6 tablespoons fresh lemon juice
  • 2 cups confectioners' sugar

Preparation

Preheat oven to 350°F. Butter a 9-by-5-inch loaf pan, line bottom with parchment and butter paper.
Beat butter and sugar with an electric mixer until light and fluffy. Beat in egg. Stir baking soda into applesauce. Mix dry ingredients, then add to butter mixture in 3 additions, alternating with applesauce. Stir in raisins. Pour batter into pan and bake until top springs back when pressed, 50 minutes. Cool in pan on a wire rack for 10 minutes, then turn out onto rack.
Make glaze: Mix lemon juice and confectioners' sugar. Spoon glaze over cake.

  • For the apple sauce I will be using Santa Cruz Organic Apple Sauce, as it is my girls' favorite.  I have tried serving them other apple sauces, but they say this one is the best...and, I have to agree...really flavorful and tasty.


    In addition to making appetizers and desserts, I will also be making lunch for the girls, as...go figure...they don't like turkey and all the fixings.  I tried last year to get them to eat the food, but found myself having to get up mid-way through the meal to make mac and cheese and peanut and butter and jelly sandwiches.  So, this year, I am planning ahead and will be making PB&J sandwiches and freezing them.  Then, on Thanksgiving morning, I will take the sandwiches out of the freezer and put in the fridge to thaw.  By, the time everyone sits down to eat, the adults will have turkey and all the fixings to enjoy and the girls will have PB&J sandwiches made with their favorite Santa Cruz Organics Peanut Butters and Fruit Spreads.

    When it comes time for dessert, the girls will get to try the Applesauce Cake.  And, if for some reason they don't like it, I will have Santa Cruz Organic Cinnamon Apple Fruit Sauces and Squeezable Pouches in the fridge they can grab and enjoy.  :-)
