A Thumbprint Cookie Recipe That Will Delight Even the Pickiest of Eaters...And It Uses Certified Organic Ingredients from Santa Cruz Organic!

I love this time of year because I have an excuse to spend more time in the kitchen baking, which I love.  And, now that the girls are older, they can now help me out.  It is fun seeing them get excited about learning how to roll out cookie dough, help cut out cookies with fun cookie cutter shapes and the best part...taste testing. :-)  Come on, who doesn't like to sample while playing around in the kitchen.  :-)

Do you have a favorite holiday cookie recipe you make each year?  Was it passed down from previous generations, or is it something you created with your kids and continue to make?  For me, I love making a sampling of Italian cookies from treasured recipes my grandmother shared with me.  I also love experimenting in the kitchen and trying to put a new spin on family favorites, either to make them more kid-friendly, a healthier version, or both.  It is always a treat to create a dish or dessert and share it with my family and get their feedback.  Even with my two girls being picky eaters, they can never say no to sampling sweets and tasty desserts I whip up.

Ingredients

  • 1 1/4 cups firmly packed brown sugar
  • 1/2 cup butter, softened
  • 3/4 cup Santa Cruz Organic® Dark Roasted Creamy Peanut Butter
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 3/4 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • Granulated sugar
  • 1 (9.5 oz.) jar Santa Cruz Organic® Strawberry Fruit Spread or flavor of your choice

Directions

  1. HEAT oven to 375°F.
  2. BEAT brown sugar and butter in large bowl with electric mixer at medium speed for 2 minutes or until fluffy. Beat in peanut butter, egg and vanilla, just until blended. Add flour, baking soda and salt at low speed until combined. Shape dough into 1-inch balls. Roll in granulated sugar. Place 2 inches apart on ungreased baking sheets.
  3. BAKE 6 minutes. Using back of teaspoon or your thumb, make rounded indentation in top of each cookie. Bake 3 minutes longer or until cookies are set and just beginning to brown. Cool 2 minutes on baking sheet. Spoon preserves into center of each cookie. Place on cooling rack to cool completely.
