Did you know that March is National Nutrition Month?  Back when I was a health educator, I used to do a handful of "Healthy Heart Cooking Classes" for the patients at the hospital that I worked at, as well as visited a few community centers to do mini heart healthy cooking classes.  Everyone loved these classes, not only because they were able to try food samples (especially the guys), bu also because they were able to take home some quick and easy recipes that they could make and that was good for them.  One of my favorite things to do was to take popular recipes like Mom's homemade lasagna and make it healthier by omitting the meat and adding spinach and other veggies.  There are so many easy ways to transform fatty, high cholesterol dishes into more heart healthy dishes, if you just slow down, look at the ingredients used, and find healthier substitutions.

While I am no longer working as a health educator, I still like to keep up on the different health issues and education available, as I hope to one day return to this line of work once the girls go to school.  But, in the meantime, I like using what I learned and what I would teach others, and apply it to my family, especially when it comes to making heart healthy meals.
